Online Cooking Recipe: Chicken, Pepper Salsa with Pepper Rice Video
This is a great simple dish for when you are hungry but not enough to eat a horse. This is extremely nutritious and healthy as the vegetables in this dish aren't cooked and therefore don't lose any nutrients lost through heating and if using organic produce will taste even better!

Ingredients (for Four People)
400g Any Rice (Brown is Best) 4 Large Chicken Legs (or breast) 1 Yellow Pepper Diced 1 Green Pepper Diced 1 Red Pepper Diced 1/2 Green Chilli Chopped 4 - 5 Large Seeded Vine Tomatoes Diced 1 Brunch of Spring Onion Chopped Chives 3-4 tspn Olive Oil Salt & Pepper
To Cook
1. Preheat the oven to 190° C (Fan 175°). brush over the chicken with Olive oil. You can add spices, garlic or lemon if you wish to add to the flavour. Cook for 30 mins and make sure the chicken is completely cooked before serving.
2.Meanwhile boil your rice (time depending on instructions). once Cooked, add a small handful of the red, yellow and green pepper and a handful of chopped spring onions (this can be served either warm or cold).
2.To make the salsa, use the rest of the peppers and spring onions, add the chives, chillies and then the chopped tomatoes and olive oil and season to taste.
