Online Cooking Recipe - Herring Potato Salad

A very quick an easy fish dish to cook which can be served hot or cold, high in polyunsaturated and unsaturated fatty acids, extremely healthy and nutritious. This recipe allows you to use many different types of fish. The fish doesn't require marinating but has perfect flavour using basic everyday ingredients. You can have this for lunch or dinner as its very well balanced with protein, carbohydrates and (good) fats.

Ingredients (for Two People)

4 - 6 Boiled Potatoes
4 Fillets of Fresh Herring (Cod, Haddock, Tuna)
Any Salad Leaves
1 tbsp Spring onions (chopped)
1 tsp Chopped Garlic
1 tbsp mixed chopped herbs (Chervil, Parsley, Chives Coriander)
1 tbsp Chopped Shallots

Sauce
1 tbsp White Wine Vinegar
1 tsp Lemon Juice
2 tspn Olive Oil
1 Vine Ripened Tomato (skinned, seeded and diced)
Salt & Pepper


To Cook

1. Boil your new potatoes for about 20 - 25 minutes and slice into quarters

2. After 10 - 15 minutes start grilling the herring.

3. In a jar or bowl mix together the ingredients of the sauce, taste and season if needed.

potsalad2.jpg 4.In A Bowl, mix together the potatoes, spring onions, garlic and shallots with the mixed herbs. Serve on a plate
potsalad3.jpg 5. In a mixing bowl, add the salad leaves (approx 2 handfuls per person). Add 3/4 of the sauce to the salad (this should be loosely covered not soaked) and mix.

6. Add the fish (once cooked) on top of the potatoes and then add the salad on the side and serve. Add the remainder of the sauce around the dish if you need to.
