Salmon Sun Dried Tomato Pesto & Pasta

A healthy salmon recipe, this tutorial shows you it takes no time to make a good easy pasta dish without having to use too many ingredients. This can be used to entertain or simply put on a dish and eat in front of the television.

The salmon contain healthy omega oils and is very low in saturated fat. This dish can also use brown wholewheat pasta, which is better for you (due to it being slow to digest releasing glucose gradually). You can use alternatives to sun dried tomatoes such as red and green pesto.

Ingredients (for Two People)

2 Portions of Pasta (Penne)
2 Fillets of Salmon
1 Jar of Sun Dried Tomato Pesto
Watercress
Olive Oil
Chervil (optional)
Salt & Pepper

1. Make sure your Salmon has been skinned, season with salt and pepper and then place in a steamer for about 7-8 minutes (for the pink middle other wise leave for another 2-3 minutes).

You can poach salmon if you prefer.

2. Put your Pasta on to cook for about 10 minutes

pesto_salmon3.jpg 3. Leave your salmon to stand and drain your pasta. Mix in ½ - 1 jar of sun dried tomato pesto with the pasta then break half the salmon into flakes and mix in with the Pasta.

4. Scatter the rest of the salmon on top of the dish.

5. In a bowl lightly mix some watercress with olive oil and add some sprigs of chervil and serve.
