Summer Seafood Nicoise Salad

This cooking recipe is extremely easy and quick to make. It is not the conventional salad in the fact you don't need a pesto sauce however using it wouldn't be a problem and the ingredients used can inspire new salad cooking ideas. This dish is very healthy in the fact is has a lot of shellfish containing Omega 3 oils and the olive oil used isn't fried, therefore a good polyunsaturated oil which is another health benefit.

Ingredients (for Two People)

4 Boiled Potatoes
200g Mixed Seafood
1 Tin of Tuna (or Fresh)
Watercress Salad Leaves
1 Egg
1 Vine Ripened Tomato / Beef Tomato (large)
A Few Olives
Half a Yellow Pepper
1 - 2 Runner Beans
1 tbsp Capers

Sauce
1 tbsp White Wine Vinegar
Caper Juice (hint)
1 tspn Lemon Juice
2 tspn Olive Oil
Salt & Pepper


To Cook

1. Boil your new potatoes for about 20 - 25 minutes and slice into quarters

2.In a jar or bowl mix together the ingredients of the sauce, taste and season if needed.
In a bowl mix some of the sauce with the watercress and then place in the centre of your plate.

4. Add the Seafood evenly over the dish and add the rest of the sauce lightly glazing the food and serve.
