Herring and Arabian Cous Cous

In this cooking recipe, we look at cooking Herring, an extremely quick dish to make which is very nutritious and contains good mono saturated and omega 3 fats which are extremely good for you health and help body functioning. In this video, we grill the fish in order to keep the fat content down. This dish can be eaten hot or cold and can be taken to work easily.

Ingredients (for Two People)

4 Herring Fillets (boned)
100g (5-6 handfuls) Mixed Salad leaves-  Organic if possible
100g Cous Cous
25 - 50g Dried Fruit
1 Shallot (finely diced)
Half a Diced Red Pepper
2 Plum Tomatoes (Skinned and Diced)
2 Pinches of chopped Spring Onion
Half a Sliced Yellow Pepper
Chervil (chopped)

Vinaigrette
1.5 tbsp White Wine Vinegar
Caper Juice (hint)
1.5 tspn Lemon Juice
3 tspn Olive Oil
Salt & Pepper
Chervil (chopped)


To Cook

1. Put your grill on a medium - hot heat and cook the fish evenly for about 6-7 minutes each side.

2.Boil your water for the cous cous and add (a ratio of 2 lots water to 1 cous cous). Put the lid on and leave for two minutes, then drain.

3. Add the packets of fruit ( add as much as you want) and set a side.

4. put your mixed leaves into a mixing bowl and add two pinches of shallots, tomatoes, red pepper and spring onions. Add the yellow peppers also.

5. Create your vinaigrette by mixing all the ingredients listed above together. Pour on three quarters on to the salad (making sure there isn't too much liquid creating a soup!)

cous_cous4.jpg 6. On a plate put the cous cous on first, then the fish and salad on top or round the side. If the salad still looks too light then add the remainder of the vinaigrette and serve.

7. Add the Seafood evenly over the dish and add the rest of the sauce lightly glazing the food and serve.
