Quick Beef Steak Salad

This video recipe takes minutes to prepare and can have so many variations, cooked hot or cold depending on preference. Just about any vegetables can be added to this dish and the way you cook the meat can be as healthy as you want from frying to grilling.

You can go as adventurous as you want with regards to dressings too, citrus, spicy or cool. This is a great meal as a starter or even as a quick meal when you don't have the time to spend a lot of time preparing a big meal. The potatoes and steak provide the more filling part of this dish and the vegetables will go a long way to giving you your five portions or fruit and vegetable a day and part of a healthy diet.

Ingredients (for Two People)

6 Boiled Baby Potatoes
125g (1 Packet) Mixed Lead Salad
2 Beef Steaks (sizes optional)
½ Chopped Fennel
2 - 3 Vine Ripened Tomato (deseeded)
2 Shallots (sliced)
½ Red Pepper (chopped)

Sauce
1 tbsp Balsamic Vinegar (or Lemon Juice)
2 tspn Olive Oil
Salt & Pepper


To Cook

1. Boil your new potatoes for about 20 - 25 minutes and slice into quarters

2.In a jar or bowl mix together the ingredients of the sauce, taste and season if needed.

3. Fry/Griddle/Grill/Oven cook your steak until cooked completely (rare if you choose)

4.Leave the steak to rest for 1 -2 minutes and then slice

5.In A large mixing bowl, Mix together the salad, pepper, shallots, fennel, tomato and potato quarters.

6. Add the steak pieces and steak gravy and add the dressing and toss. Add salt and pepper.
