Spicy Chicken & Sauce with Bacon, Cabbage & Rice

This recipe gives a few ideas for  many other dishes as so many ingredients are cooked within it. A Healthy meal using a selection of vegetables tastes wonderful. Remember when eating this to remove and discard the chicken skin as this is quite fatty and be careful when adding the chilli.

Ingredients

Chicken Breast / 2 Chicken Legs (Optional)
Bacon
Cabbage
Rice

Sauce
Balsamic Vinegar
2 Leeks (Chopped)
1 Celery Stick
2 Shallots
2 Carrots (Chopped)
1 Green Chilli (chopped)
1 tbsp Sun dried tomato paste
1 Tin of Chopped Tomatoes
Vegetable Stock 100 ml (optional)

Spices for both Chicken & Sauce
Allspice
Cajun
Clove (optional)
Cumin Seed
Paprika
Turmeric


To Cook

spicy_sauce4.jpg 1. Chop your Carrots, Celery, Green Chilli (remove 80% seeds), Leeks and Shallots and put in pan ready for cooking. Start cooking the chicken.
spicy_sauce2.jpg 2.Sprinkle 50% of spices into the baking tray and rub you chicken down with them. Place the in the fridge to marinade for 1/2 hour (opional)
spicy_sauce3.jpg 3. Heat up Olive Oil and cook Chicken for five minutes on each side. After, place in the oven on 180° for 20 minutes.

4. Heat Pan with olive oil, place in vegeables for the sauce. After a minute, stir in the rest of the spices and sun dried tomato paste. Cook for 1- 2 miuntes.

5. Add the Balsamic Vinegar to de-glaze the pan and then add the tomatoes. Add some Vegetable stock and simer for 15 -20 minutes

spicy_sauce6.jpg 6. Cook Rice for 12 - 15 (depending on type)
7. Cook Bacon pieces in a pot and the when cooked, add cabbage and cook together for about 1-2 minutes
